I am loking for a new ride and i have decided that i will buy a 320 CDI, but should i find one with Airmatic?
The car will be fitted with 19" and i will keep the suspension stock.
Yes! I'd definitely recommend that you get your E320 w/ airmatic suspension for the sole reason that it'll handle so much better especially in corners.

Will 20" fit with stock airmatic suspension?

Will I notice a big difference in acclaration with 19" and 16"?
No, I shouldn't think so. My understanding w/ bigger rims and tires is that it provides more stability for the car..that's all. W/ regards to your 20" rims, I'm not sure if it will fit w/ the stock wheel arch. I think the max you can use are 19" tires. I don't think the size of your tires isn't connected at all w/ your suspension. I know that there is a connection b/w the tire size and the brake disc size.

Do i need to lower the front with airmatic?
I hate the bigger gap in front between tire and fender.
No I shouldn't think so. If you fit any car w/ enormous rims and tires, that gap you're talking about will disappear. However, you can lower your suspensions if you'd like and even stiffen them so you get better traction around corners especially at high speeds.
